Simple Pasta Sauce
1-3 big glugs of Extra Virgin Olive Oil
1 heaped tsp of dry basil
1 heaped tsp of dry oregano
1 tin of San Marzano tomatoes
1/2 a bulb of crushed garlic
1 chopped shallot/small onion
Heat your pan to medium with the oil in, and throw in the herbs for about a minute to infuse the oil with all their herby goodness.
Next, throw in the onions and cook them to your liking. Personally, I like mine to just be on the edge of caramelizing for my sauces. Toss in the garlic for about a minute before throwing in the San Marzano’s.
Once the tomatoes are in, be sure to squish ’em all down (making sure they don’t squirt all over your white shirt…) and keep it on a medium to medium low heat and simmer for a good 10-20 minutes to break down the tomatoes to make a thick sauce. You never want a watery pasta sauce!
And that’s it! So simple, so easy, and can be used in so many dishes! This one we just went with some spaghetti, but you could use this in just about anything.
Make your own tweeks to suit you! Need some pepper? Just add it! Want a bit of a kick, throw in some cayenne pepper like I usually do. Want to turn it into a sauce for pizza? Simmer it for around 6 hours. (This is something I always do for pizza.)
